Home built pedals and shifter

Great forum and program JSJ! 
I am planning on building my own pedals ( clutch, throttle and brake) and h-shifter. What I was wondering was how do I do interface my pedals ( 3 pots) and shifter (6-8 switches) to my computer. Do I buy a joystick and cannibleize it? I would prefer to use the usb port if possible. I'm running windows xp home edition and race GPL and Racing Legends (when it comes out.) I currently use a Logitech wmff wheel with ch pedals (throttle and brake) hardwired to the logitech pedal base. I plan on using a Logitech momo force wheel for steering input only and everything else with home made input devices.
P.S. Any suggustions on what type/brand/resistance of potentiomer to work best with windows xp would be greatly appreciated.
